Thumbing through magazines is a favorite pastime for me. It's not for the articles, but for the recipes one finds amongst the copious advertisements that can take up almost an entire periodical. It was through the perusal of an ad for Toll House Morsels that I came upon the soon-to-be dessert of choice: The Toll House Pie. But chocolate chip cookies in a pie? Really? Certainly Toll House Morsels are a perennial favorite in the form of gooey, disc-like mounds baked on a cookie sheet--but in a buttery, flaky pastry? I decided right then to investigate the matter.
My love for good cuisine is encouraged by the fact that cooking and baking involves all of our senses. Somehow the sight of this velvety smooth concoction, dotted by those little cocoa brown tid-bits from heaven, bid me to give it a try. I wasn't disappointed. The smell of chocolate chip cookies enveloped in a flaky pie crust tempted me long before it was due out of the oven. That first bite of delicate semi-sweet chocolate and crunchy toasted pecans was delightfully enhanced by the brown sugar blend that generously filled the pastry. It only takes a very small, rich slice to satisfy the craving for sweets that most of us experience from time to time.
Only a few basic ingredients are needed to bake up this sugary treasure: eggs, flour, white and brown sugars, melted butter, chocolate chips, and an unbaked pie shell. Simply mixing the ingredients together in a bowl, pouring it into the pie shell, and baking for one hour sends you on your way to reveling in this to-die-for dessert! What could be easier?
The Toll House Pie also makes a wonderful gift for a beloved friend, relative, or co-worker. Having given this pie more than I have eaten it myself, I can assure you that every recipient will be satisfied as well as grateful. As a Christmas gift, birthday treat, or won't-you-please-forgive-me peace offering, it is certain that a request for the recipe will soon be forthcoming.
Having been a collector of recipes for many years now, there are few recipes I can truly say I would be pleased to make over and over again. Twenty-five years have passed since I stumbled across this recipe for Toll House Pie, and I still reach for it today. And I continue to glance through many a magazine to find a new cooking treasure that could very well one day become an old favorite. Fortunately for me, I just happened to find a culinary gem that put a new spin on an old favorite--the noteworthy and renowned chocolate chip cookie--in a pie.
